BACON-WRAPPED CHICKEN

Ingredients:
6 boneless skinless chicken breast halves
1 carton (8 oz each) whipped cream cheese with onion and chives
1 tablespoons butter
salt to taste
6 bacon strips

Assembly Instructions:
Flatten chicken to ½ inch thickness. Spread 3 tablespoons cream cheese over each. Dot with butter and sprinkle with salt; roll up. Wrap each with a bacon strip. Place, seam side down, on a greased pan. Flash freeze. Place frozen chicken breasts in a freezer bag. Seal, Label, Freeze.

Serving Instructions:
Thaw. Place chicken in a greased baking pan. Bake, uncovered, at 400 for 35-40 minutes or until juices run clear. Broil 6 inches from the heat for 5 minutes or until bacon is crisp.
Before baking you may sprinkle chicken with seasoning mix such as lemon-pepper or Montreal steak seasoning.

Bagel Pizzas:
1 pkg. Lender's Bagel
1 Jar pizza sauce
1 pkg. Pepperoni (and any other toppings you like)
1 pkg. Mozzerella Cheese
Cut each bagel in half, spread pizzasauce on the cut side then layer pepperoni, cheese, and any other toppings you like. Bake at 350 for 15-20minutes

Supper Club Chicken:

4 chicken breasts
6 Tbsp butter
1 envelope Italian Good Seasoning Mix

Melt butter, add seasoning mix. Add chicken and fry until done. Remove chicken breasts and cut into pieces (cube). In the same pan add:

2 cans cream of mushroom soup
8 oz reduced-fat cream cheese
2/3 cup white cooking wine

Heat until mixed well. Add cubed chicken back to mixture. Cool. Seal label and freeze flat.

Serving Day instructions:
Thaw completely. Bake for 1 hour at 325 covered or until bubbly. Serve with brown or wild rice blend.

Mardy’s Meatloaf
Supper Swap Recipe

2 lb. Ground beef
2 eggs
¼ cup onion chopped
1 ½ cup Rice Crispies
salt
pepper

Sauce:
¾ cup ketchup
¼ cup brown sugar
1 ½ tsp dry mustard

Mix together ground beef, egg, onion, Rice Crispies, salt and pepper. Mix sauce ingredients in a separate bowl. Put half of sauce in the meat mixture and combine. Put meat mixture in a storage bag and seal. Put remaining sauce mixture in a small storage bag and seal. Place both bags in a gallon freezer bag. Seal, label and freeze.

Serving Day Directions:
Thaw all ingredients. Put meat mixture in an 8-inch baking pan. Top with sauce. Bake for 30-45 minutes. Or you may use a loaf pan and bake approximately 60 minutes.

Beef Stroganoff:

1 1/2 lbs lean ground beef or 1 1/2 lbs ground turkey
2 tablespoons flour
1 1/4 teaspoons salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/2 cup chopped onion
1/4 cup butter or 1/4 cup margarine
1 (10 1/2 ounce) can cream of chicken soup
1 (6 ounce) jar sliced mushrooms (optional)
1 cup sour cream
Directions:
1.Combine meat, flour, salt, pepper and paprika.
2.In a large skillet, cook onion in butter until golden.
3. Add meat and brown while stirring.
4. Add cream of chicken soup and mushrooms (if desired) and cook 5 minutes.
5. Add sour cream. Cool and freeze.

Serving day: Thaw. Heat on stovetop until heated through (be careful not to burn). Serve over noodles, rice, or chow mein noodles.

Freezer Quesadillas

Ingredients:
1-1/2 C. Chicken; cooked and finely minced*
1/4 C. Reduced fat sour cream
1 C. Thick and chunky mild salsa
1/2 C. Shredded cheddar cheese
1/2 C. Shredded Monterey Jack cheese
1 t. Chili powder
8 Flour tortillas; 6-inch

Assembly Directions:
In a mixing bowl, mix chicken, sour cream, salsa, cheeses and chili powder.

Freezing Directions:
Place chicken mixture in a quart-sized freezer or storage bag. Seal. Place quart-sized freezer bag inside of a gallon sized freezer bag. Add tortillas. Seal, label and freeze.

Serving Directions:
Thaw contents of the quesadilla kit. Remove tortillas and separate. Lay them out on a flat surface, such as a clean counter, and divide the filling evenly between the tortillas. Fold each tortilla in half. Spray a fry pan with cooking spray. Cook the quesadillas one at a time in the pan, lightly browning them on each side. The cheese in the filling should melt. After each one is done, remove it from the pan. Using a pizza cutter cut each quesadilla into 3 pieces.

Breakfast Bake: Makes 2 casseroles (6-8 servings each)

4 1/2 cups seasoned croutons
2 cups shredded cheddar
1 medium onion, chopped
1/4 cup chopped sweet red pepper
1/4 cup chopped green pepper
1 jar sliced mushrooms, drained
8 eggs
4 cups milk
1 tsp salt
1 tsp ground mustard
1/8 tsp pepper
8 bacon strips, cooked and crumbled

In a large bowl, whisk the eggs, milk, salt, mustard, and pepper. Add cheese, onion, peppers, and mushrooms. Place mixture in freezer bag and freeze. Place croutons and bacon in a separate quart freezer bag.

Serving day:
Thaw. Place mixture in an 8x8 baking dish. Mix in croutons. Sprinkle bacon on top. Bake, uncovered at 350 for 45-50 minutes or until done.

Oriental Sesame Chicken Strips
Supper Swap
Ingredients:
1/2 cup Honey
1/3 cup Orange juice
3 T. Soy sauce
2 teaspoon chicken bouillon granules
1/2 teaspoon red pepper flakes
1/4 teaspoon ground ginger
1 tsp garlic powder
2 tsp sesame seeds
2 tsp of cornstarch
2-1/2 lbs.Boneless, skinless, chicken breast; cut in strips
1.5 cups rice

Assembly Directions:
Mix dry ingredients in large bowl until well blended. Add honey, juice, soy sauce and mix well.

Freezing Directions:
Place the chicken strips in a freezer bag. Pour marinade over chicken in bag. Seal. Place inside another freezer bag so that the chicken is double-bagged. Freeze flat.

Serving Directions:
Thaw chicken and thread on skewers through each chicken strip. Broil 4 inches from heat, or grill over medium coals 8-10 minutes or until cooked through, turning frequently. You can also cook the chicken in a non-stick skillet on the stovetop.
Serving Directions for rice:
Combine packet of rice, 3 cups water, 1 teaspoon salt and 1 tablespoon oil in large saucepan. Stir. Bring to a rolling boil, then lower heat to simmer. Cover with a tight-fitting lid and simmer for 15 minutes. Do not lift lid while cooking. After cooking, set pan off the heat for an additional 5 minutes, again DO NOT LIFT THE LID.

Chicken Swiss Casserole

1 box Uncle Ben's Long Grain and Wild Rice
3 cups cooked chicken; cut into cubes
6 slices deli Swiss cheese
2 4 oz cans of mushrooms
2 cans cream of chicken soup
1/2 cup white wine
2 cups herbed seasoned stuffing
1/2 cup butter

Spray a 9x 13 pan.

Cook according to directions a package of Uncle Ben's Long Grain and Wild Rice.

Cook 3 boneless, skinless chicken breasts; cut into cubes.

Spread rice in pan. Layer chicken on top. Cover chicken with slices of deli Swiss cheese.

Drain 2 4 oz cans of mushrooms, layer on cheese.

Mix 2 cans cream of chicken soup with a 1/2 cup white wine. Pour over the mushrooms.

Sprinkle 2 cups herb seasoned stuffing over.

Drizzle 1/2 cup melted butter over crumbs.

Bake uncovered 1 hour at 350.

Pizza Burgers: This recipe yields 24 pizza burgers so adjust accordingly.

2.5 cups cooked ground beef
30 oz pizza sauce
1/2 tsp garlic salt
1/2 tsp onion salt
1/4 tsp oregano
3 oz pepperoni cut into small pieces
2 cups shredded mozzarella
24 hamburger buns

In a large bowl, mix the ground beef, pizza sauce, garlic salt, onion salt, and oregano. Add the pepperoni pieces and mozzarella cheese, stirring to mix well. Fill buns with meat mixture. Wrap in foil. Place in a freezer bag and freeze.

Serving day:

Allow the number of buns you need to thaw for no more than an hour (I would maybe thaw for 10 minutes or not at all)-If they thaw too long they will get soggy. Bake in the foil for 15-20 minutes at 350 degrees F until hot.
