We had the Beef Stew last night and it was great...I agree with Anna it could use more potatoes and let veggies.

Cheesy Chicken Casserole
Supper Swap recipe
October 2008

8 oz egg noodles
3 cups cooked chicken
1 ½ cups cottage cheese
2 cups shredded American cheese
½ cup parmesan cheese
1/3 cup milk
1 can cream of mushroom
1 can cream of chicken

Cook noodles. Mix together rest of ingredients, stir in noodles. Place mixture in a gallon freezer bag. Label and freeze flat.

Serving Day Directions:
Thaw casserole mixture and place in a greased 9x13” pan. Sprinkle crushed potato chips.
Bake at 350 for 45 minutes or until bubbly.

Catalina Chicken – supper swap instructions (10/08)

Serves/Makes: 6

Ingredients:
1 1/2 cup long-grain rice -- uncooked
6 boneless, skinless chicken breasts, approx 2 pounds total
16 ounces whole berry cranberry sauce
1 envelope dry onion soup mix
8 ounces Catalina or Western salad dressing
1 1/2 cups water

Measure 1 ½ cups rice into small Ziploc bag (sandwich size). Place chicken breasts in gallon Ziploc freezer bag. Combine cranberry sauce, soup mix and salad dressing in bowl. Pour into quart size Ziploc freezer bag. Place 3 baggies into another gallon Ziploc freezer bag along with Serving Day Instructions below. Freeze flat. (note that the water is used only for the serving day)

Serving Day Directions:
Preheat oven to 350F. In a bowl, mix rice with 1 ½ cups water. Pour into a greased 9x13” baking dish. Layer the chicken over the rice. Pour sauce over all. Cover very tightly with foil. Bake for 1-1/2 hours.

Easy Italian Pasta Bake -

1 lb. extra lean ground beef
3 cups whole wheat penne pasta, cooked and drained
1 jar (26 oz.) spaghetti sauce
1/3 cup grated parmesan cheese, divided
1-1/2 cups shredded mozzarella cheese

Preheat oven to 375. Brown meat in large skillet; drain. Add pasta, sauce and half of the parmesan cheese; mix well. Spoon into 13X9 inch baking dish. Top with mozzarella cheese and remaining parmesan cheese. Bake 20 min. or until heated through.


Barbecued Hamburger Mix

1 cup chopped onion
2 tbsp butter
4 lbs ground beef
1 bottle (14 oz.) catsup
1 cup water
1/2 cup chopped celery
1/4 cup lemon juice
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tbsp salt
2 tsp vinegar
1/2 tsp dry mustard
2 cans chicken gumbo soup

Saute onion in butter. Add ground beef; brown lightly. Drain off excess fat. Add rest of ingredients and simmer covered 30 minutes. Use to full 30-40 small hambuger buns.

Or, cool and freeze in 5 1-pint freezing containers. Seal and label with name and date. Before serving, heat mixture slowly in skillet or microwave container. 1 pint fills 6-8 small hamburger buns.

Freezer Quesadillas
Supper Swap Recipe November 2008

Ingredients:
1-1/2 C. Chicken; cooked and finely minced*
1/4 C. Reduced fat sour cream
1 C. Thick and chunky mild salsa
1/2 C. Shredded cheddar cheese
1/2 C. Shredded Monterey Jack cheese
1 t. Chili powder
8 Flour tortillas; 6-inch

Assembly Directions:
In a mixing bowl, mix chicken, sour cream, salsa, cheeses and chili powder.

Freezing Directions:
Place chicken mixture in a quart-sized freezer or storage bag. Seal. Place quart-sized freezer bag inside of a gallon sized freezer bag. Add tortillas. Seal, label and freeze.

Serving Directions:
Thaw contents of the quesadilla kit. Remove tortillas and separate. Lay them out on a flat surface, such as a clean counter, and divide the filling evenly between the tortillas. Fold each tortilla in half. Spray a fry pan with cooking spray. Cook the quesadillas one at a time in the pan, lightly browning them on each side. The cheese in the filling should melt. After each one is done, remove it from the pan. Using a pizza cutter cut each quesadilla into 3 pieces.

Comments:
*You can easily mince chicken in a food processor or mini-chopper.

My kids love these! It’s nice to have the filling totally ready and in a kit form. It makes it a convenient recipe to serve when you have unexpected company or for those football Saturdays.

Chicken and broccoli bake:

1 10 oz package frozen chopped broccoli
4 cups cooked, diced chicken
1 10 3/4 oz cream of chicken soup
1/2 cup light mayo
1 4 oz can mushroom stems, drained
1/4 tsp curry powder
3/4 cup grated Parmesan cheese

Cook broccoli in boiling water according to package directions. Drain broccoli and spread in a 13x9" baking dish. Mix chicken soup, mayo, mushrooms, curry powder, and 1/2 cup Parmesan cheese in a medium bowl. Spread chicken mixture over broccoli. Sprinkle 1/4 cup Parmesan cheese over top. Cover dish with foil and freeze.

To prepare for serving, thaw dish and bake covered in a preheated 350 degree oven for 40 minutes. Remove foil, stir, and bake an additional 20 minutes more. Makes 6 servings.

Old-time beef stew:

2 lbs beef cubes (stew meat)
1 T. oil
4 cups boiling water
1 T. lemon juice
1 t. Worcestershire sauce
1 clove garlic, minced
1 onion, sliced
1 T. salt
2 bay leaves
1/2 t. pepper
1 t. sugar
1/2 t. paprika
dash of allspice

Serving day:
1 lb carrots, chopped
3-4 potatoes, chopped
1-2 cups frozen peas

Cooking day instructions:

Brown meat in oil. Add rest of ingredients and cook 1-2 hours, until meat is tender. Freeze, using freezer bag method.

Serving day instructions:

Thaw completely and place stew in a stockpot. Add vegetables and simmer 1-2 hours, until vegetables are tender. If desired, some of the liquid may be thickened with flour. Serves 6-8.

Single family recipe

2 pks crescent rolls
1 lb hamburger, browned
16 oz sour cream
1 pkt taco seasoning
2 c. cheddar cheese, shredded
doritos, crushed

1. open crescent rolls and press evenely onto bottom and sides of a 13x9inch baking pan
2. brown hamburger(drain grease if desired)
3. mix hamburger, sour cream and taco seasoning in a mixing bowl
4. pour into pan
5. sprinkle cheese over meat mixture
6. Sprinkle crushed chips over cheese

Serving day instructions
1. Thaw
2. Bake coverd at 350 for 25 minutes, remove cover and bake 25 minutes more or until heated thru
